1 pint heavy cream or 1 can full fat coconut milk (place in fridge for a few hours or overnight before using)
1 pint strawberries
up to ¼ cup sugar
1 teaspoon vanilla
- Mash half of the strawberries with a fork or in a blender with as much sugar as you like. Slice the other half into 1/8” thick slices lengthwise.
- Make whipped cream: if using heavy cream, beat with the vanilla until stiff peaks form. If using coconut milk, open the chilled can and pour off the liquid. You’ll only beat the solids. Beat with vanilla until stiff peaks form.
- Fold mashed strawberries into cream, then sprinkle sliced strawberries on top.
- Grab a spoon and don’t stop until it’s gone!
